They are all pretty available these days. The prices on the sig site are probably on the high side, and dont reflect street price.

I have an MPX-C and I have used the original collapsible stock as well the Thin Folding (Kate Moss) stock. I see the point of each. The thin fold has more length of pull. The collapse one has that MP5 feel and I like as well. I am still on the fence, I often take both to the range since I cant make up my mind. Cheek weld is good on both. I think sights at absolute co-witness are best. Lower 3rd is a little high.
The collapse stock feels like I get more head up field of view for situational awareness, the thin-fold is more of a head town, longer range feel to me.
Many people say the Collapse+Fold stock is the best, I have not tried it and don't like the look.
As for an AR stock, I think that defeats the whole purpose. If I wanted an AR carbine stock, I'd have an AR. Having a buffer tube on a weapon which needs no buffer tube is silly.
