It's a unit of dry measure.  4 pecks equal 1 bushel.

Just ask Peter, he picked a peck of pickled peppers.

That is ensiling or fermenting.  It works well for certain vegetables;kraut, kimchi, and to make alcohol etc.  Only stone age societies and the Swedes use it for meat.

Sauerkraut. You need cabbage, water, salt and a jar with a one way air release valve.

ETA: I guess lactic fermentation is not pickling.
