I know there are plenty.  Aside from the very expensive name brands ...does anyone have one they really like that is sturdy, holds a decent edge and comes in under 100.00?

Here is a Japanese style Gyoto aka chefs knife thats within your budget. If you want to stay with a western style Amazon has some decent prices on Wusthof knives.

Bought this very knife on the recommendation of another arfcommer. I'm no master chef, but it gets the job done.

Neither IIRC. Chef's knives are like ARs, what are you planning on doing with it? Heavy chopping? One knife to rule them all? What features (ie full tang, stainless steel, etc) do you want?

I've had my 10" Henckels for 22 years.  Keeps a nice edge.  Sharpens easily.

Mostly for prep work...meat and veggies and occasional carving.  Would like it to be fairly heavy.  Full tang.  Preferably not a wooden handle.  I took a chance on this but it doesn't hold an edge well and the blade flexes way to much.  Dissapointed....

I know I am asking a lot out of a sub 100.00 knife.  I could go with a 9 or 8".

How bout the blades that are notched...for lack of a better word...supposed to make the blade cut easier thru food.

I run a BBQ Joint and for my kids and my employees I run the Victornix/Forschner, but my personal knives are Shun's I use them at BBQ comps and in the kitchen. hand down better.... but If I lost one I would be pissed... when the Forschner not so much. So either will work nothing wrong with the Forschner's  just not in the same class and the Shuns

Fujis are nice, the blade is ground with a bias towards the right handed user though.

You can't go wrong with the Forschners. You gotta work a little harder to keep them sharp, but they're tough and you won't cry too much if someone decides to use it for a prybar.

The Fujiwara knives are good.  For under a $100 you could pick up a Tojiro DP gyuto, VG-10 steel and really well made.  Probably among the best bang-for-the-buck knives out there.

I got one of those Forscher knives as a gift. It was so sharp, it cut through the packaging it was in. Its my go to knife whenever I have a cutting/prepping job to do.

You really can't beat the Dexter Russell sani safe line for the price. You can probably pick one up for 35-40 bucks

I have a 10" DR sani safe cooks knife that I yanked from my parents house 10 years ago when I was just starting out on my own. My dad in turn yanked it from one of his restaurants probably 10 years before that. It's still going strong. I imagine it will for the next 10 years too.

I also have a good selection of DR knives for fishing. Splitters, filet knives, breaking knives.

i use one of these daily:
global g-19 27cm (about 11in) it does literally anything i need it to do; skin fish, dice anything, clean tenderloins, carve meat, anything. it is a little out of your budget, but well worth it.
