I did 50/50 oak mesquite last weekend on a 7 pound brisket.  
Turned out great!


I'm jealous of the cuts of beef you guys get down there in TX.

I did a roast this weekend (Green Mtn Grill), 160°f for 2.5 hours, foiled, 375°f for three hours.

Holy shit it was ridiculous.  Perfectly poached egg oozing down on all of the smokey goodness...

Bravo!  I did a brisket last week.  This weekend I did pulled pork, marinated in pineapple and mango nectar and then chicken, same way. 

This is just the flat.  Light salt and pepper only.  I spritzed it with PBR every hour or two.  I cube up the point into burnt ends and put it in a pan with Sweet Baby Ray to caramelize a bit.  The cubes are like eating candy!!!  This is 100% Angus Choice.  There is very little difference between Choice and Prime.  Even some ungraded briskets turn out awesome.  You just gotta know how to pick a good one.  Every time it is perfect on a pellet grill.  This was a 14 hour smoke.  

After porky was pulled, we deep fried some fresh tortilla and served porky over chips.

I did a smoked brisket hash, too.  It was incredible.  I also diced some brisket up and placed it in an omelette.  Such flavor.  Much good. Wow.
