[ETA] IT'S NOT A "DINNER PIC" - just showing off what I got to eat today.

What do you do with a bunch of pulled pork that I smoked for the 4th after you've eaten pulled pork sandwiches all week?
You hand the leftovers over to your wife, who proceeds to turn them into pulled pork enchiladas! Pulled pork, green chilies, onions, mushrooms, and cheese all topped with a green chili salsa:

Now that's a damn good idea. I am damn sick of pulled pork bbq sammiches but I never thought to do an enchillada or even a chimichanga. Time to thaw out some leftovers.

We'll have to have you over before too long. BTW - I did a shrimp boil with 2# shrimp, sausage, taters, corn, and onions just for the inlaws and myself. Took all of 20 minutes, piece of cake cleanup, and all the good flavors of a much more elaborate crawfish boil. Since I know you like it so much, gimme a call on what I did. It's cheap too when you get the large shrimp from HEB for $4/pound.

We did the same a few weeks ago. I used 2lb of size 13-15 shrimp tails from Costco. The next day I whipped up some home made shrimp cocktail sauce to finish off the left over chilled shrimp. Yeah, my phone lines were down.

FWIW - pork and green chilies are just meant to be together. I highly recommend anyone who hasn't tried it to whip up a dish. Thankfully, our friends in New Mexico continue to produce abundant crops of this lovely pepper. Only one and a half more months to go until the next Hatch Green Chilies will be harvested and available fresh. w00t!

I kind of agree it's getting pretty damn close to a carnitas burrito mojado. But since it appears to be rolled only and not ends folded, and has been baked/broiled, then it's still on the enchilada side of the house.
