Now that's a damn good idea.  I am damn sick of pulled pork bbq sammiches but I never thought to do an enchillada or even a chimichanga.  Time to thaw out some leftovers.

We did the same a few weeks ago.  I used 2lb of size 13-15 shrimp tails from Costco.  The next day I whipped up some home made shrimp cocktail sauce to finish off the left over chilled shrimp.  Yeah, my phone lines were down.

You're right - neither my wife nor I like corn torillas a lot so flour is our usual choice.

I kind of agree it's getting pretty damn close to a carnitas burrito mojado.  But since it appears to be rolled only and not ends folded, and has been baked/broiled, then it's still on the enchilada side of the house.
