Does it have to be beef?   What about B.A.C.O.N. ?   Trader Joes has a decently spicy Bacon Jerky.   It's kind of a little sweet with a lot of heat.  AND, it's BACON!

Make your own for 33% the price.  I just made 10lbs from top round roasts.  Using this thread as a basis













I added my own twist with carolina reaper powder to the mix and bought a new 9 tray Excalibur dehydrator.  This thing swallowed up all 10 lbs and make a hell of a batch.  Only thing is my teeth are aching bad lately.  




YOu can buy a cheap nesco round dehydrator and get by.  Ive had a nesco, just figured it was time to upgrade the dehydrator based on Elfy's thread above.

Make your own and be proud.  Makes great gifts and impress your buds etc.  Why is it so difficult for the Alpha?????  Now the beta i can understand....buy it.

I had some habanero jerky that came from one of those "Beef Jerky Huts" that seem to exist in touristy places.  It was actually really good and not crazy hot.

Yep, they have a few flavors.  I only use if for the cure.  I rely on my spice cabinet to augment the cure.  The Hickory seasoning does seem to be the best that blends with custom tastes.  I added a tbs of carolina reaper powder from fresh dehydrated peppers and some brown sugar etc.  6 hrs later and you have a bunch of custom jerkey you built.  A nesco 5 tray dehydrator will work nicely and dry about a 3-4 lbs round roast. I have by butcher slice some with the grain and use some of my Japanese kitchen knives to go against the grain for different textures.  




Just use Elphy's youtube as a basis and go from there....




Dont ever buy jerky again.  You pay at least 3 times what its worth and its not custom.  




Have fun with it.  My wife and daughter and all her freinds saw thru this stuff fast.

Make your own and to get it hot get some habanero powder. I tried using hot sauce and I guess the dehydrator diminishes the heat although Dave's insanity was fairly effective.
