ETA: Cooked almost any way. Grilled, blackened or broiled preferably. Frying is good, but usually reserve frying for lesser fish. I didn't clearly read in a restaurant though.

I like bluegill/panfish.   Perch and walleye also great.  Pike/pickerel is very good.
Trout is so so.  Hatchery trout has no flavor.

I think the water conditions and source of the fish are more important factors than the species of fish.  I've had Rainbow trout from a pond where it was fed pellet food and it was inedible.  I couldn't even finish the first bite.  This also applies to newly stocked Rainbow trout from the hatchery.  The meat is grey.  Nasty!  

Conversely, I've had 16" Rainbows from the Connecticut River whose flesh was a red-orange color and who fed on a buffet diet of insects, crayfish, minnows, etc that tasted heavenly.  Wild fingerling Brook trout are also awesome.

I like almost all fish. I got Icelandic Wolf Fish at one very nice restaurant that I had never had a bad meal at. I took one bite and thought I was imagining how bad it was, took a small second bite and almost . Hubby thought it was fine so we swapped dinners. I've also had snapper several times that was not cooked well and has left me wondering if I actually like it.

I like fish more than other types of animal protein. I love hogfish, trout, flounder, mahi, tuna, salmon, corvina, etc.

Salmon would be my choice.



But I've never been to any restaurant that has ever been able to prepare it well.

I love almost any fish I've ever eaten.
