I bought a set of Zwilling J.A. Henckels Twin Signature for Christmas and love them. What are your go to kitchen knives?

90% of the time if I am cutting something in the kitchen I used my griptilian and just wipe the blade off after.  Wife has a set of Calphalon's she likes

I can afford any knife set, I still use a Kiwi. Best fucking knife. Easy to sharpen to a razor.

I just picked up some Calphalon pans and I really like them.  I'll have to look into their knives.  I need some new kitchen knives.

Shun Ken Onion series. I bought an 8 inch chef's knife and 6 inch utility knife separately. I really wanted the cleaver which is like $299 by itself. Woot had a set of 4 for $399 so I snatched those up. Cleaver, 10 inch chef's knife, bread knife and 6 inch serrated utility knife. At least 800 bucks worth of steel bought on their own.

I use Wushoft knives. The Wife and I got them as a wedding gift. I use them almost daily as I love to cook. I think they're a great knife at a fairly low price point. I do occasionally dream about some of the high end Japanese knives but I can't bring myself to spend that kind of cash. I could see how someone would though.

The good ones are mine, the colored ones are for my wife "destroyer of kitchenware" to use.  I use the zwilling ja henkles twin four star ii 8" chefs knife the most followed by the shun classic paring knife.  That is a ginsu bread knife too lol.. Works great!

I have a KBAR blade I rescued from a gunshow table for $5. No handle. Someone cut the tang off and brazed a bolt on with a big lump of brass to screw onto that. I removed that and had some flat stock brazed on and installed and pinned a hunk of maple. Shaped that and put a finish on it.

They had put a bevel on it more conducive to a kitchen knife so it works great. I keep it sharp with some good stones and a Zwilling steel. It does everything I need.

Usually whatever pocket knife I'm carrying at the time, which more often than not is my ZT 0550 or my Spyderco Manix 2.  In the event that I need something with a longer blade, I'll reach for my wife's Wusthoff Santoku.

My Himalayan Imports Farm Knife.

It's a heavy beast and you need a strong wrist to work with it for a long session, but it's also a razor in semi-cleaver form.

It handles all the meat cutting duties and most of the veggies...this is an old pic, the blade has acquired considerable patina since then.

Some Rachel Ray crap that has a rubber handle and my wife can throw in the dishwasher.   It serves well enough as long as I can touch it up from time to time with a sharpener I keep in the cutlery drawer.

I'd like to have a $300 chef's knife but it's a waste of money for my situation.

Spitzenklasse plus brought back from Germany.Most of the German kitchen knives are actually made better if they're going to be sold in Germany,at least according to my German BIL.I have a few Shun knives but to be totally honest I'm not too impressed with them.

If you don't mind carbon steel, you can't hardly go wrong with CCK, they have thin vegetable knives to thick bone choppers.
