not a "dinner pic".

improvement suggestions welcome.



1. fry up a pound of bacon that has been chopped up



2. take the bacon out and fry some spicy smoked sausage in the grease


3. take the sausage out and fry up some chick thigh chunks in the grease


4. take the chicken out and brown some onions in the grease


5. dump in the celery and bell pepper (and more onion since they were accidentally mixed with the celery and pepper earlier) and fry that up




6. add garlic


7. and spices (black pepper, crushed red pepper, smoked paprika, thyme)


8. after frying up the garlic and spice for a bit, dump your rice in and cook for a bit till the rice is grease coated and slightly nutty



9. add a can of rotel tomatoes with green chiles  (I usually don't add  tomato but someone wanted to try it this way)


10. dump all the meats back in add chicken stock, cover, and simmer until the stock is absorbed



11. hit it with some tobasco and eat:

around 2:1 ratio to the rice

This was 6 cups rice :  a little under 12 cups broth

you don't put roux in jambalaya (at least the Louisiana branch of my family I got this from doesn't)

gumbo can use it.

I fell into the habit of making a roux for anything rice and meat dish years ago. Once I brown the meats I can't stop myself... lol

No roux in jambalaya, but there is no shrimp and/or crawfish in it, so it's not jambalaya.  It doesn't look bad, by any means, but it's not jambalaya.  There must be either shrimp or crawfish, or preferably both.

That makes my mouth water! The pot didn't look to be hot enough for the bacon.  The chicken done in smaller amounts at a time will produce a wonderful amount of fond that will enhance the dish with another layer of flavor. If that was in front of me now I would eat too much and feel good about doing so.

the bacon shot was just after throwing it in. it was hot enough to get a lot of fond from the bacon and sausage, but yeah, I should have done the chicken in batches.

it's that rotten bastard corporate chicken that is "15% salt water solution" released too much liquid and took up the bacon/ sausage fond.

I did let the chicken go until the water evaporated and got a some browning on it, but yeah, could have taken it further.

I should have let the onions go a bit longer too but people were in a hurry to eat since I got a late start cooking.

I know plenty in the Plaquemine Parish who would disagree with you, too.  To each his own, but in this part of the world, if shrimp and crawfish are in season, it's the right thing to add to almost any dish.

Correct, Jambalaya is a poor cajun/creole dish thats been made with rat, nutria, gator, snake, whatever happened to be available.

And tomato is fine. I like to put it in sometimes--you can actually add some tomato paste when toasting the rice to make the Jambalaya more rich, just don't over do it.
