I ran across this posted on facebook,  BBQ Bacon Sushi roll and thought, I can work with that. I’m going to change it up a bit and use venison and sprinkle on some “Pinconning Cheese Company   3 Pepper Burger Rub   ”, (this stuff is great), and then stuff it with a layer of sauteed kale, on top of that I’m going to use smoked Gouda with roasted and chopped onions, roasted and chopped jalapeño and sautéed cremini mushrooms. Roll it up and then bake it while basting it with my favorite BBQ sauce. Of course it wont be the same and it will be bigger but I think it will be better.

It's called a fatty. People have been smoking them for years.

I just finished smoking one. Half ground pork, half ground beef stuffed with spinach, feta and shallots. Smoked with a bit of applewood at 350 for about 90 mins.
