We will be spending the first two weeks of August in Alaska doing a DIY fishing and sight seeing trip; we plan to drive from Anchorage to Fairbanks and then down to the Kenai. About half of this time will be spent in hotels and cabins while the other half will be spent sleeping in the back of the SUV or maybe in our hammocks.

Will we generally be OK keeping a cooler with some food in the vehicle or are the bears like Yosemite and make it a point to raid any vehicles that they see?

You'll be fine.

I personally wouldn't recommend sleeping anywhere near your food. In Cold Bay bears routinely break into SUVs that people have left fishing rods in, attracted by the fish smell on the handles. Here in Kodiak the bears are often in dumpsters even in town. ADFG advise keeping your distance from your food when camping.

I've not had any trouble with them while camping around Fairbanks and Valdez.  Of course there is always a first time for everything......
