We've got one or two causing problems up here. And if I'm reading the DNR digest and regs on their website correctly, hunting one that has or is threatening to cause damage exempts you from night hunting and snare usage laws, as long as the snares are done IAW the regs. Am I understanding that correctly?

You can hunt one whenever you want, night, day, in between.
You may also use nvgs with a laser designator
The snares are an area where I'm not sure, but as far as I'm tracking private property should be good to go as a response to depredations

The guy who hunts my father's property uses a red spotlight, thermal vision, and remote control caller.

Hunting them at night is fine as long as the rifle caliber is .269 or less.
