I'll be flying in on the 19th for some business and staying through the following Friday. Any must do's while I'm town?  I'll be working Sun-Thurs, 2p-11p, and I'm not a bar-goer/drinker.

Yep, and lots of people have the day off.  Do they still do fireworks at Liberty Park?

Days of 47 (Rodeo, parade, and other cowboy stuff)
Hogle Zoo is pretty cool if you like that kind of thing.
I've been to a lot of museums and the Utah Museum of Natural History is one of the better ones I've been to.
I recommend a visit to Temple Square for everyone coming to Utah for the first time.
City Creek for some shopping and food if you find your self downtown. (Pretty much across the street from Temple Square).
Doughnut falls and Salt Lake Overlook (Desolation Trail) are good short hikes if you're feeling outdoorsy.
Clark Planetarium is an option too.

I don't recommend the Aquarium yet because they are still growing it and lot of it is still empty. Some cool stuff there but it's just not a finished product yet.

Utah Oympic Park and Park City are options too if you have a bigger chunk of time.
