Need to know about the Great State of North Carolina's laws?

Must inform LEO if stopped? Ect?

I'll be staying near Sapphire for a few days.

Must inform law enforcement you are carrying and be prepared to show permit and photo id.
Absolutely no alcohol consumption (or in blood stream) while carrying.
Cannot carry anywhere that is posted no firearms.
Cannot carry in most state buildings.
Cannot carry at funerals or parades or anywhere that charges admission (someone correct me if this was changed in the last session).
Cannot carry on school grounds (including colleges and universities).  Can leave firearm locked in trunk on these properties.

Yup, the parade and funeral thing was changed so it's no longer an issue.

Go to www.handgunlaw.us and look at the NC link. It has about the best and most understandable list of laws for NC that's current.

Biggest thing is to make sure to inform if stopped by LE and that signs carry the weight of law. You do not need to be asked to leave before being charged if a premise is posted no firearms.
