As I'm making my plans for my 7.62 suppressor, I'm thinking about getting the barrels of our hunting guns threaded.

One of them is my son's Remington youth model 700 chambered in .243.  It doesn't have a heavy barrel; just the standard profile hunting barrel.

The OD of the barrel is 0.650 at the crown.

What's the minimum diameter that can be threaded? Will this barrel work, or would I have to look into a heavier profile barrel for him if we were to suppress it?

I wasn't sure how much of a shoulder we'd require to have the suppressor seat properly.

You dont have enough to shoulder there i think.  How about 1/2 x 28 and get an adapter.  I had my sporter barrel 700 308 threaded 1/2 x28 for my Sportsman DT.....but it i has a 1/2x28 insert like a Harvester.

The shoulder will be too small, but you don't have to get a new barrel.  You can have the barrel threaded, and and adaptor with a larger diameter shoulder made.

Morgan (Class 3 Machining, he is a ARFCOM vendor) can do this for you.  What he will do is put a smaller course thread on it then make a adapter from it to 5/8-24.  That will give you proper shoulder.  Good guy to deal with probably the cheapest place to get a Rem700 barrel threaded there is also.  I don't recall if he pins the adapter on or is just using rocksett or something.  This the direction I would recommend for you.  Contact info is on his website.

I'll vouch
I have a barrel cut and pinned by Morgan. He also has a thread in the "services" section on the EE
