If you wanted to choose a round that was somewhere between .308 and 5.56 for both hunting and self defense, which round would you choose?  What are some rounds you have looked into?  I know the primary ones I have done research on are 6.5 grendel, 6.8 SPC as two options.

I have 6.8 SPC II. Works great on hogs of all sizes. Needs only a 6.8 specific bolt and 6.8 mags plus barrel to go to 6.8 from 5.56/223. 30rnd 5.56 size = 24, 20 = 14, 10s are roughly the same size (Ihave six 6.8 ASC mags and they have been flawless.)

pretty hard to go wrong with a 6.5 grendel.

if you reload and want something that uses common parts (minus mags) and essentially free brass. the 7.62x40WT should put the smack down on some texas hogs and "harvest" deer just fine. sorry had to do it! lol setting in a stand/blind 100yds from a feeder isn't hunting.

I chose the 6.5 Grendel, I now have 3 AR-15's in 6.5 Grendel.  In typical ARF.com fashion I'll probably end up with four at some point.  Lol

7.62x39 and 6.8SPC both kick butt. Head shots on pigs blows their eyes out. I think my 6.8 is much more accurate, but the x39 is so cheap to shoot.

6.8 SPC.  Very versatile, and it doesn't eat bolts the way the Grendel does.  The Grendel is made from the 7.62x39 case and has experienced some of the same bolt life issues that the x39 ARs do.

not even close...

I tossed around what to do with a stripped upper and went with 6.5, seems to have the advantage at greater distances and has been around for awhile.
