I just got a P229 with a hammer, when I get it home I realize it is double action only with no decocker, why in the world would Sig put a hammer on a DAO handgun

The question is rhetorical at best. The P229 is still a hammer-fired gun regardless if it's DAO or DA/SA. What do you propose SIG should've done?

I have a 229 SAS that is DA/SA with a hammer, I like the option to fire it single action, hence the question.

The hammer hits the firing pin to fire the gun. If you don't like hammers there's a plethora of striker-fired alternatives.

The advantage of the unbobbed hammer in a DAO pistol is that it will fit into the same holsters as DA/SA pistol.  Most duty holsters have a thumb break device that fits over the back of the hammer.  It is also possible that the DAO hammers are so uncommon that they are just modified from the "off the shelf" DA/SA hammers.

My P30 technically has a hammer, but you can't grab it (it's flat).

Before DAKs existed, SIG made DAO hammers because there were people who wanted a DAO pistol. Some police departments only wanted DAO guns. The DAO hammers were manufactured without the single action notch. Simple and probably more cost effective than redesigning the entire hammer.
