Yeah so here's a dinner recipe for anyone that's in a SHTF situation and has to leave home in a hurry and head for the deep woods for an extended stay.  Your truck might not get you there though because the gas stations are all closed and you don't want to be on the roads anymore anyhow. But you've got some good horses in the barn that are ready to rock and they'll appreciate you packing as light as possible.  This recipe also assumes you planned ahead. So let's get started ...

First gather all of your ingredients. I like to experiment a lot with this part but these are the basics I tend to the most.  You could use a dry rub, but this will be a marinade. Mix up your your ingredients well and set it aside.



Get the leanest cuts of beef you can find (or whatever meat you prefer). Here we have a top round and 2 shoulder cuts. 5 1/2 lbs for $13 (on sale).   This is the most time consuming part. Get your knife good and sharp and start slicing.



Remove as much of the remaining fat as possible and seperate it from your lean slices. I usually seperate into 3-4 piles. Here I have 2 piles that have too much fat for this recipe but the middle one is excellent in stews, chili, fajitas, stir fry or whatever.  The one on the right would be good to make beef broth or soup, but I'm splitting this particular pile among my dogs for a treat.



Take your lean cuts and put into your cowboy marinade, cover and put it into the fridge for 24 hours, turning occasionally.



I don't know if this step is necessary, but I do it to save time.  After 24 hours, lay your meat out on paper towels and absorb as much moisture from it as you can.  You've probably already guessed that we are making jerky and moisture is not your friend for this recipe. Plus your oven will thank you.





Lay your strips out on your drying racks and season to taste.  I like fresh ground pepper on mine.  I've got a triple stack rack but I only needed 2 here.



Set your oven on its lowest setting (we are drying, not cooking) and place your racks in the oven.  Mine only goes down to 170 but I leave the door cracked a little to let the moisture escape and I doubt if it gets that warm in there.



8-12 hours later you've got a pile of the good stuff that will last you long time and will look something like  shoe leather (but tastes much better).  Your Cowboy bugout dinner is complete and you're ready to roll.



But since the SHTF isn't happening quite yet, I'll throw the jerky in the freezer for when it does happen and make me a burrito for now.

MMMMM BEEF.....

Don't make fun of the horse meat...Used to ride the school bus with a kid (30+ years ago) whose Dad? was an alcoholic horse gypo.. (ie broke all the time)...Got invited to dinner quite a few times...Found out later that they were wintering on horse meat....Never had a bad meal at that home....
