Remember the longer you cook them on the highest heat you can get, the more tender the come out op.

15m per side at 400 F should do it

Fat adds flavor to the steak, even if you don't eat that fat. This works even better if you use cast iron.

I would leave it on the steak and eat everything, but fat fried extra crispy is plain awesome.

They are NY strip.

If I buy really lean filet mignon I may not have to cut off fat, but they still get marinated and cooked till just a little pink remains.

If the cut of meat is crummy, THAT's when you disguise the flavor and texture - by marinating and over-cooking them.

Cutting fat and silver-skin off of wild game is acceptable, because that's where a lot of flavor comes from. ( from what they eat.  Deer - bark, acorns, leaves, etc. - yuck )

You're acting like you're the smart one when you're actually quite ignorant about this.
