You were going to get as many answers as there are people.
Spice blends and mixes are so varied from culture to culture and person to person, it all comes down to personal taste. Example- Someone posted Garam Masala. There are so many variations of that particular mixture, we could not list them all here. Ras Al Hanout, the “top shelf” blend of Moroccan/North African Cuisine, usually has 10+ spices in it and can very shop to shop. We have not hit on BBQ rub, Cajun Blends, etc. yet. It is truly almost limitless. |

Hot take - I think they all taste about the same. People will get heated over their choice of Cajun seasoning, but imo there ain't much to it. Most of Cajun seasoning is just a salt and paprika base anyways, with varying amounts of onion powder/garlic powder/cayenne pepper. Something herby. Herbs de provence, or whatever garlic/herb type thing you can find at your local grocery store. This is good for grilled or roasted pork or poultry, or for soups and stews. |

I keep a full cabinet of spices/herbs/etc and use them daily. |

Tony Chachere's creole seasoning, Montreal Steak seasoning, and a good BBQ rub.
But if you aren't limited to just 3, really there are a lot of blends that should be added. A "Tuscan heat" blend that has a little red pepper in it is amazing for oven-roasting tomatoes to add to pasta dishes or for making a roasted tomato sauce. Zatarains Blackened seasoning is great as well. Weber's Kickin' Chicken is another good one. I use chicken or beef bouillon powder in a ton of recipes. My Cuban friends used Sazon Goya in pretty much everything. My spices take up a whole kitchen cabinet, all three shelves. When you need them you need them. |
