Probably baby goat.  Not that "exotic", but unusual for the US.  And it was tasty!

Not all that exotic compared to some, but here's a few that aren't everybody's standard meats:

Turtle
Squirrel
Rabbit
Deer
Moose
Elk
Frog
Goose/duck/dove/pheasant
Alligator
Escargot
Ostrich
Buffalo
Shark
Eel

I would like to try some African game meats at some point.

There was a thread a few years ago where a guy was hunting things like bobcat and coyote and doing "kill it and grill it" threads.  Pretty sure he ate the backstraps off both a coyote and a bobcat.  I would try that at least once.

Shot an Aoudad last week.  Lots of unusual game running around west Texas and it's all ended up in the freezer at one point or another.

Sandhill crane would be the most unusual bird.

Sea turtle soup is pretty tasty.

I guess the most unusual would be seal, just because due to our stupid marine mammal laws, its not  common in the US, but common in certain parts of Canada.

From our neighbors to the south probably Iguana.

I guess I'll add Caribou although it's not much different then Venison or Moose, just something many people have not had the opportunity to try.

I don't consider Raccoon, Beaver, or Ground Hog Exotic.  They're common and available almost everywhere, people just choose not to eat them.

Soft Shell Lobster's kind of a unique one.  Found one mid molt while diving, fried that sucker up and ate it like a giant soft-shell crab.  Same with some s

Sun-dried octopus on Crete.  Nasty shit.

I'm not sure how "exotic", but the crawdads, alligator and oysters Saturday were very good.

Rabbit is exotic?  Huh...ate a bunch of that growing up, and muskrat too when Dad could get his hands on some.

Shark, buffalo can be had at Kroger around here, no big deal.

I've had ostrich at Cabela's, escargot and calamari at Mancy's.  All yummy.

I've eaten unusual food all over the world, plenty of African game, wild fowl and their eggs, strange land and sea creatures in Thailand, Japan and Taiwan, gators, rattle snakes. possum, and whale blubber domestically. The one thing that stands out to me was some fermented seal flipper I had in Alaska. It wasn't bad but I probably will not seek it out again.
