I bought a set of Zwilling J.A. Henckels Twin Signature for Christmas and love them. What are your go to kitchen knives?

Shun Premiere...I just like the way they look and they cut like a lightsaber.

90% of the time if I am cutting something in the kitchen I used my griptilian and just wipe the blade off after. Wife has a set of Calphalon's she likes

Shun Ken Onion series. I bought an 8 inch chef's knife and 6 inch utility knife separately. I really wanted the cleaver which is like $299 by itself. Woot had a set of 4 for $399 so I snatched those up. Cleaver, 10 inch chef's knife, bread knife and 6 inch serrated utility knife. At least 800 bucks worth of steel bought on their own.

I use Wushoft knives. The Wife and I got them as a wedding gift. I use them almost daily as I love to cook. I think they're a great knife at a fairly low price point. I do occasionally dream about some of the high end Japanese knives but I can't bring myself to spend that kind of cash. I could see how someone would though.

Wusthof 10" Chefs knife.
Can do 90-95% of all the kitchen tasks I need to do. I have 15 others because I like to use them...... |

I asked for Wusthöf for Xmas. I ended up with that rainbow color set from Costco

I have a KBAR blade I rescued from a gunshow table for $5. No handle. Someone cut the tang off and brazed a bolt on with a big lump of brass to screw onto that. I removed that and had some flat stock brazed on and installed and pinned a hunk of maple. Shaped that and put a finish on it.
They had put a bevel on it more conducive to a kitchen knife so it works great. I keep it sharp with some good stones and a Zwilling steel. It does everything I need. |

Usually whatever pocket knife I'm carrying at the time, which more often than not is my ZT 0550 or my Spyderco Manix 2. In the event that I need something with a longer blade, I'll reach for my wife's Wusthoff Santoku.

I like the cheap metal handled silver ones they take a wicked edge and don't care to throw them away and buy a new one.

I have one nice Shun chef's knife that I use when I know it won't get abused. Otherwise have some inexpensive but decent Calphalons.

I got the Mora Classic set for Christmas a few years ago, really love it.

I have 2 old Kock Messers that have been in my kitchen for 15 years. No idea where they came from but they work and sharpen really well.

Some Rachel Ray crap that has a rubber handle and my wife can throw in the dishwasher. It serves well enough as long as I can touch it up from time to time with a sharpener I keep in the cutlery drawer.
I'd like to have a $300 chef's knife but it's a waste of money for my situation. |

Spitzenklasse plus brought back from Germany.Most of the German kitchen knives are actually made better if they're going to be sold in Germany,at least according to my German BIL.I have a few Shun knives but to be totally honest I'm not too impressed with them.

I have a set of Wusthof Classic knives that are amazing. My problem is I don't know the first thing about keeping them sharp.
