My wife hates sardines and the smell, but she was gracious enough to cook this dish for me.

Whole kitchen smells like fish now, she had a candle going, like that's going to eliminate the smell.

I have a lunch of sardines, soda crackers and a chunk of cheddar cheese once a week. I usually take the sardine can out to the hurby curby but last week I just tossed it into the garbage can under the sink.

Wife's cooking dinner and opens the cabinet door to toss something in the trash. Staggers back like someone slapped her in the face with road kill and then threatened to kill me if I ever do it again.

I might have to try it sometime.  Is it a Yankee thing?  When I do a motorcycle roundabout I'll have to see if they serve them in CT or up that way.

That sounds great.  I'm a huge sardine, crackers and hot sauce kind of a guy.  I don't eat it as often as I wish because the wife about croaks anytime I crank open a can.

  1. Preheat oven to 500, place an ovenproof dish inside while you assemble the ingredients.
  2. Flake the sardines together (or lay them down whole) with the parsley, garlic and onion. Season generously with black pepper and tip into the heated ovenproof dish. Put in oven for five minutes.
  3. Gently crack the eggs into a bowl. Remove the sardines from the oven and carefully pour the eggs on top. Season generously and return to oven for 15 minutes until the eggs are cooked but jiggly. Let sit for a few minutes before serving so they congeal further.
There are different variations to this, I used more onion, but you can adjust the ingredients however you like. I used 4 eggs, but you can use 5 or 6. Also, I add a lot of garlic. I love garlic.

Enjoy.

Well, I'll eat sardines on occasion, and I like eggs.  Not sure what I think about them together though.

How about peanut butter and sardine sandwiches with lots of mayo! . . . . . me neither.

I made some last night. Have had it before but had not thought about that recipe for years prior to this post.  I added some fresh oregano to the sardine mix and garnished with chives. It was tasty and packed with protein, about 40g in one dish using 3 eggs.
