That's because they are not Mexicans. My local Mexican joint is mostly staffed by central Americans of questionable legal status. They are nice people though. Corn tends to be the preference of people from most regions of mexico. Most of the people I've seen who use flour are from northwest mexico like my grandparents.
Some of the flour tortillas are so large, they call them tortillas de sobaco or tortillas sobaqueras because they reach from the wrist to the armpit. Home made corn and flour are both delicious, but tacos made from flour tortillas are out of |

Mexican food is American.
Like pizza and hamburgers. There's no "authenticity," just regional preferences. |

There's no Mexican food in the state of Misery. It's been argued that there's no mexican food north of I-10. I'd change that to north of I10 and east of Houston. When I was younger, I took deliveries from our farm down to to Chicago and Milwaukee. There are areas in both cities where it's almost entirely Mexican, over some very large areas, and there are some great restaurants in those neighborhoods. Really cheap, too. And many other large cities have similar neighborhoods. |

Most of the Mexican joints around here offer your choice of Flour or Corn... Or if they don't offer them, they'll have'em if you ask...
I myself like the corn, but I'll tear up some regular flower ones just as well... I love me some Fajita's.... I also, love me some Tomilito (not Tomitio like the Mexican tomato)or ""Corn Cakes"... I think I like corn anyway you can make it.. |

Real authentic tacos are corn tortillas, usually doubled up. At least that's what my Mexican BIL makes. View Quote That is an excellent idea. I am allergic to wheat so I use the corn tortilla shells. The soft ones always break apart and make a mess. I will try doubling them up next time. |

Get a shallow pan and fill it with about an inch of oil. Fry and lay on paper towels to soak up the oil. That's the way to do it. |

Soft corn tortillas suck. You must not have had a fried one. Not fried is still good, but fried is awesome. The smell makes me want to puke. The smell of frying corn tortillas is wonderful. As for tacos, fresh fried corn tortillas beat the hell out of "taco shells". Corn tortillas for enchiladas, flour tortillas for burritos. Stuffed sopapillas are popular up in the mtns here, smothered in green chile. What a chimichanga wishes it was. |

View Quote ^^^ My wife makes some awesome catfish tacos and will lightly fried corn tortillas. Fried catfish, add some chopped cabbage, some lime, and tobasco sauce. Not quite Mexican food but one of the best uses I found for corn tortillas. I like to cut corn tortillas into bite size pieces and fry them until crispy in a shallow pan of oil. I dry them on a paper towel for a minute to soak up the oil and then put them back into a hot pan and scramble some eggs with them. My wife likes shredded cheese on hers.
