Anything else just plain sucks...that is all.

Sourdough was invented by communists to usurp all which is good and just in this country.

Blah you guys obviously don't know what you are talking about. Sourdough is awesome I mean really the only thing that comes close is jalapeño cheddar, but it's not general purpose.

Fact is-- I have been craving some fantastic sourdough rolls, not to be had anymore. Reckon I will have to order some of the ''sourdough starter'' and make my own......

Publix by me does a Sourdough French bread that makes a meannnnn homemade sandwich lightly toasted.

Make your own starter. All you need is rye flour and water, or use the pineapple juice method. I have a King Arthur Flour starter and a Rye starter that I did from scratch. The Rye starter seems more robust to me. Takes about a week or so to get going - the pineapple juice version is less prone to failing.
Pinapple juice starter I save the waste from the weekly starter feedings - it makes for outstanding waffles and pancakes. Super simple and great pancakes/waffles. King Arthur Flour starter |

San Francisco makes the best sourdough IMO...both La Parisian and Columbo, IIRC, going back to my college days in the early 80s.
I could eat a whole loaf by itself, right out of the wrapper. Chris |

We are talking uncooked or partially cooked dough here, right

While Sourdough bread is most certainly a good bread, it isn't the begin-all-and-end-all of breads!
There are some dinner cuisines where it would not fit in at all, in fact it would ruin the taste balance!!! To say anything else sucks is just plain stupid!

Sourdough does not have to be sour. Sourdough is just the practice of using a dough as a pre-ferment - or something like that. A starter doesn't have salt in it so it isn't a dough. Sourness is controlled by hydration level of the starter, how much starter is used, and how it's used to build the final dough. A good French Pain à l'ancienne is not sour like a 'San Francisco Sourdough' is expected to be, but both are sourdough. Sourdough is pretty amazing stuff actually and pretty versatile.

SOUR RYE STARTER:
2 cups rye flour 1 1/2 cups warm water 1 package dry yeast 1 slice onion Mix the flour, water, yeast, and onion together in a wide-mouth quart jar. Cover with a cloth and put in a warm place for 3 or 4 days or until it is well fermented, frothy, and smells pleasantly sour. Remove the onion. Either use, or seal and refrigerate. Can be used as part of the sponge in all sour rye breads. |
|
You don't need the packaged yeast to start a starter. Whole rye flour has plenty of wild yeast.

Went to a place outside of Atlanta that served their chili in a sourdough bread bowl, damn it was good.
FYI....the chili had beans, like it is supposed to. |

There is a bakery in San Luis Obisbo CA that makes the best Sourdough I have ever had. One version they make has whole cloves of garlic baked in. Amazing. Plain, Garlic, Garlic with Cheddar...... I need to go back and get some soon...

Used to hate it. Only recently had I started to develop an appreciation for it, but then I started a paleo diet and it was back off the menu.

I'm an equal opportunity carb fatty. Sourdough, Rye, Potato, whole wheat... they all have their place in the world.
