I don't know how you make chili. How do you make chili?
Go snag some recipes from le intertubes and adjust to taste. That's the whole point of making it yourself instead of eating a cookie-cutter recipe... is adjusting recipe(s) to your taste. That's how you end up with your own recipe. Just FYI. |

4 cans of chilli beans
pack of bacon 3 lbs ground beef canned diced tomatoes with or with out the fancy flavors chopped onion cumin chilli powder cayenne pepper fresh garlic dried chilli peppers Brown the ground beef then mix everything else in the crockpot and let it sit for a couple of hours. I don't use exact measurements for the spices I just put some in at the beginning and add if needed at the end |

Chili has no beans. Beans are only added by people who are too poor to buy much meat. They add beans as a filler to keep their whiney ass children from bitching that there is nothing but soup in their bowl.
So my question back at you is. Are you broke? Because if you are, then you cannot afford to make chili. You can however make a cheap imitation of chili called bean soup. |

Carriage Hill Chili
(serves 6) 3 pounds chuck roast, cut into 2" cubes 2 yellow onions sliced and quartered 1 head celery cut into 1" slices 4 bell peppers (various colors to your liking) sliced and quartered 28 ounce can whole peeled or chopped / diced tomatos 7 ounce can diced green chiles 1/2 cup chili powder 1 tablespoon cumin 1 tablespoon salt 3 tablespoons of oil 1/2 cup Crystal hot sauce Add oil of choice to a 4 quart aluminum dutch oven with some salt and heat over a hot stove until smoking hot. Brown the roast pieces evenly over all surfaces. Add one pint of water, cover, and simmer 2 to 3 hours until meats shreds easily. Seperate meat from broth and save the broth and put the broth aside, in the refrigerator. Shred the meat (by hand) removing fat and gristle. Scoop fat from chilled broth and discard. Set broth aside. Saute vegetables. Add broth, tomatoes, shredded meat, cumin, hot sauce, and chili powder and simmer while stiring periodically over low heat for 3 or 4 hours until somewhat stiff and not soupy. Serve warm with optional dolop of sour creme and sprinkled with chopped cilantro. |
