Thanks to HTF Member LesPaul1 for dropping off some recently caught Halibut and salmon on his insane cross state hunting trip.  Dude decided to DRIVE from Juneau to Fairbanks, drop off fish, and then out from there for hunting.  All in all, probably 1000mi round trip for him  The silver salmon will be tomorrows dinner thread btw.

So thank you dude.  We really don't get any fresh seafood in Fairbanks.

So first things first, I let the halibut warm on the counter for a few minutes before patting it dry with a paper towel.  I made a mixture of (approx) 1 tsp of: black pepper, cayanne pepper, salt, rosemary, thyme, basil, oregano, and garlic.  Added that to about 3 tbls of Parmesan cheese.  Rub evenly over the fish on all sides.and let sit for a few minutes while the cast iron heats up.

In this case, I threw about a tablespoon of bacon grease in the pan and let it get pretty damn hot.

Put the fish in and cook for about 2 minutes on each of the 4 sides until golden brown.  Test one of them for cook.  Should be creamy white and flake evenly all through. Let rest while you finish everything else you want for dinner.  In this case, it was popcorn shrimp and potatoes.  Drizzle accumulated juices over the fish and enjoy.


Revolver is a Ruger GP100 Wiley Clapp edition with 158gr Hydrashok loaded.  Knife is a CRKT folding Razel.

No recipie on this really.  Just threw together random things I knew would work.  Didn't have the stuff at home for what I grew up eating (broiled halibut with a dijon and parm crust) so I did something similar.  If you haven't had halibut, it is freaking amazing.  Very similar to Mahi Mahi in flavor.

How are you cooking it?  Fish, especially your fattier ones are really temp sensitive.  Salmon is only 2-3 minutes per side, etc.  I have an electric stove and this was on a 6 for the entire cook time.  Not to mention the cheese was caramelizing and mixing with the juices.

At least someone got some this year.  My dad went on the boat at Chitna and got 4 smallish reds.  Brother got nothing from shore at the usual holes by O'Brien Creek.  Sucks that they built that damned boat launch over the best one a few years ago.

Yep, early second run was epic.  Some were cooking up the Kenai so fast, that they still had sea lice on them near Skilak.  Good fun on a medium fly rod

Lol my recipes are all pretty damn easy.  I don't have any  If you have extra to spare, I won't complain

For the silvers tonight, I'm thinking pan seared with a light teryaki on some steamed short grain white rice with bacon and caramelized onion
Edit:  Forgot I have some leftover halibut chunks from last night that are going into a halibut cake as appetizers
