Cabbage is on the menu for tonight

I want to season with bacon.

Do you guys fry out the bacon and add the grease to the pot?

I cook the bacon, muddle or crumble it, and drop it into the pot, grease and all. Though sometimes I use bacon crumbles, which means I just drop the bacon crumbles into the pot, which doesn't include the cooking fat.

Tastes pretty good either way.

I've seasoned mostly with salt pork (fat back).

Render it, add water and bring to a boil and then add the cabbage and salt & pepper.  Simmer until desired doneness.

Sometimes it turns out a touch bitter.

I thought bacon might be better

I like it steamed with salt pepper and butter, no ham, no bacon, no fatback,
steam it with potato chunks, carrot chunks and an onion in 1/4s

I just drop the slices in the water. The heat melts the fat, fat circulates around the cabbage.

I often go a different way. Leave the bacon fat in the pan, use it to carmelize the cabbage.
