Wow, there are so many recipes which also depend on the seafood.
Personally, I like to use Lime, coarse Sea Salt, white pepper, a touch of Thyme, a few Hot Pepper Flakes and very thinly sliced Onions, then after a day I add Olive Oil and Cilantro leaves.

Shrimp doesn't really absorbe external brines easily. Sliced octopus is great as are sliced scallops. The Italian Pepperoncini pepper flakes work  great. Warm and not too hot. Certain fatty fish (Herring) are also good or even salmon. I've done it with a blend of mussels, squid rounds, mini scallops. I like the addition of thin raw mild onion rings (Vidalia). A laurel leaf work well also.
