Ahhh butcher paper... Shit works I also use targets in a pinch.

I just use an inner layer of a charcoal bag......no reason to buy paper when you already have it.

I wrap my brisket in butcher paper, I think it retains more bark than foil and still holds the moisture

Or just no paper at all if you're in a kamado or something else that holds the moisture. Aaron Franklin had an episode where he did three briskets side by side in an offset: one foiled, one paper, one naked. The papered brisket won the taste test. |
