Turning 56 y/o tomorrow.
Thinking of a nice steak with scallops and shrimps/baked tater with salad
Perhaps lobster?

Give me your suggestions/recipes and most of all,
what would you make?

Interesting...

don't have a sous vide,but always wanted to try direct on the fire/right on the coals method.

Seasoning suggestions? Rosemary,Thyme or Sage?

Reverse sear looks cool as well

Parsley? Coriander?

Def,salt and pepper.right?
EVOO too?
Marinate beforehand?

I never have but I really want to try sous vide.

I've moved away from marinading steak plus EVOO. I usually just salt and sit for an hour, then pepper, then straight into the hot pan with a little high temp oil and butter.

The reverse sear method has worked well for me, too. Its great for thicker steaks.
