Beer Bread Stuffing
This recipe calls for two loaves of bread to be baked and cubed.
Ingredients:
2 loaves – beer bread
1 package – breakfast sausage
2 large carrots
4 large stalks celery
2 large onions
2.5 cups chicken broth
1.5 cups beer (1-12oz beer)
Ingredients to make beer bread:
3 cups flour (sifted)
3 teaspoons baking powder (omit if using self-rising flour)
1 teaspoon salt (omit if using self-rising flour)
¼ cup sugar
1 (12oz) can of beer
½ cup melted butter
Directions to bake beer bread:
Preheat oven to 375 degrees
Grease loaf pan with butter
Mix dry ingredients and beer
Pour in to a greased loaf pan
Pour melted butter over mixture
Bake for 1 hour, remove from pan and cool for at least 15 minutes
Cube bread and place in 14x10 baking pan, leave it out overnight to harden
Next day:
Cook breakfast sausage:
Heat a nonstick skillet to medium-low
Add sausage links
Cook for 12-16 minutes or until cooked through and browned, turning often
Preheat oven to 350 degrees
Slice carrots, celery, dice onions, and slice breakfast sausage, place in a large bowl
Dump hardened bread cubes into the same large bowl
Toss ingredients to mix (add parsley, sage, pepper, or other ingredients to taste)
Add contents of bowl to the 14x10 baking pan and add 2.5 cups chicken broth and
1.5 cups beer (1-12oz beer), cover with foil
Bake in oven for 45 minutes, remove foil
Continue baking for 15 minutes
