Scored a Prime whole brisket at Costco $3.29/lb for this weekend. This would be a unicorn for this region.
Plan: Salt and Pepper rub. 10-12 hour smoke with a Treager blend pellet on a Pellet Pro grill. Fat side down. Small pan of water on the side to maintain humidity. I might inject with broth, but still debating. It is good with or without.  |
