We bought a hind quarter of beef this year and I have a few cube steaks.  I know chicken fried steak is the obvious answer but does anyone have other recipes or ideas.  I will try just about anything.

My wife showed me the way to make a proper Chix fried steak.  Use a tenderloin steak, pounded out the size of a small plate.

Cube steak is pretty good just cooked in a pan.  Or, use the pieces on a homemade pizza.

Cube steak with:



Brown gravy

Mushroom gravy

Flour gravy



and



Mashed potatoes

Scalloped potatoes

Au Gratin potatoes



and



Asparagus

Peas

Corn

Green Beans





That's not even trying. Nor using anything more exotic than salt and pepper.

Just Flour S&P, pan fry then slap then on a roll with Mayo.

Cube steak reminds me of when my Grandma stopped caring about food and developed the old people need for cube steaks and crunchy stuff .

i worked at a country club where we did this. we used the tails (small end) that were trimmed off while cutting filets. 3 pieces was an order.

Cube steak makes great swiss steak.


You can do that in a crock pot and it gets really tender.

I marinate in a little worchestshire sauce and some Montreal steak seasoning while the grill is getting hot.  Makes for a quick and easy meal.

2 packages of gravy, one cup water.  Make the gravy in a frying pan, it will be way too thick, add the cube steaks and cook until the gravy thins out and the meat is done.

I'll sometimes put it in a non stick pan ( I don't even brown it ) with a couple cans of Rotel and simmer it for 3 hours. Serve with mashed potatoes. It is so tender.

Throw a bunch of them in a slow cooker with two cans of cream of mushroom soup, 3/4 cup water and a package of Lipton Onion Soup mix. Cook on low for the day. Serve over mashed potatoes with some green beans on the side. Works every time!

After seasoning, lightly batter with flour, brown both sides on medium high until golden brown, then transfer to shallow baking pan.  Deglaze frying plan, then mix in a can or two of cream of mushroom soup, add sliced mushrooms (fresh or canned), chopped onions,  When hot and well mixed pour on top of steaks in baking pan, cover and bake in 350 degree oven for 1.5 hours.  Served with boiled red potatoes, green vegetable of your choice, and plenty of warmed French bread to sop up the gravy.

I was making spaghetti one night and realized I didn't have any ground meat.  I just took some cube steak and chopped it into pieces and put it in the sauce instead of using ground meat.  It was awesome.
