I've been wanting to build my own pedal for a while now, but I can't seem to find a resource that will teach me how the pedal works and why. Most of the DIY kits I've seen are just kits with instructions, but I actually would like to have a working knowledge of how the circuits inside the pedal is affecting the signal from the guitar. Anyone know where I can find a book like that or maybe a website?

Have you looked around geofex.com and diystompboxes.com?  Lots of discussion on parts and circuits though some of it gets to far into the weeds for me, but definitely a lot of good tech.

You will love this then. A good place to start. The tubescreamer.

tubescreamer in depth

Get the BYOC OD2 kit, it is an awesome clean boost and tubescreamer circuit in one.

It has three different popular OD mods incorporated into the kit plus true bypass.

It is my goto boost for my marshall.

For the 'why' part you need a good understanding of discrete components and what they do electrically.

Then you will understand how it works in a pedal...

But....electrical theory can be very abstract and mathematical...

And I guess music theory isn't ....

Most dirtboxes are, in essence, just simple single gain stage preamps.

I would start with a kit & build it. Then Google up some mods and perform them, which will give you a better understanding of how different components effect how the pedal sounds.
