15" Retina, Intel Core i7, Iris graphics, 8 GB RAM, 256 GB SSD, looks to be excellent condition without any blemishes.

This pawn shop allows for returns. 7 days full cash refund, days 8-30 for exchange.

Apple icon in upper left -> About This Mac -> System Report.  On the Hardware Overview screen that opens, the second item should be Model Identifier.  Tell us what that says.

So yeah obviously this is a concern. First thing I would do is wipe the drive and restore to factory state. Then I would take it to the Apple store to see if it's stolen. I would never consider buying something for that much if the pawn shop didn't have a return policy.

Being a Windows guy, can someone point me to how to restore to factory state with a Mac.

And all these 15" Retina Pros have a quad-core i7 right? Like a 3XXXqm processor. I'm thinking this is from 2013.

Reboot and hold down the option key as it's booting.  It'll load the boot selection menu and you can choose the Recovery option.

Most pawn shops have to enter this type of stuff into a database to see if it's been stolen.

i have to agree with this.
Restart it from cold boot to make sure there's not a "it's stolen" lock on it after connecting it to an internet accessible wifi.
