So, after trying the FlapJacked muffins, which are fucking awesome, I decided to reverse engineer the recipe.
Here is what I came up with:
1/3 cup protein powder (highly recommend a rich chocolate flavor)
1/3 cup almond meal/flower
1 tbsp buttermilk powder
1/2 tsp baking powder
1/2 tsp stevia
1/2 tsp butter/butter powder/ghee
1/4 tsp salt
Add water to make a thick dough/paste, microwave in coffee mug for 30s
Nutrition will vary with your locally available ingredients, but mine comes to:
375 cal
30g protein
14g carbs
0g sugar
4g fiber
Remainder healthy fats from butter & almond meal
And IT TASTES AMAZING! Eat it as a desert, or as a breakfast. If you use butter powder, it's an all-powder recipe that can be kept in Tupperware at work and made in a coffee mug with only water. Keep it as a no-pre, last minute breakfast or lunch to prevent that fast food catastrophe.
