Do I just let them grow and harvest them in the fall?

Not necessarily. You can dig them up at anytime, once they get large enough, which will probably be before fall. They grow at different speeds. Just beware, they are invasive and will take over the area. I'd put a physical barrier in the ground if you don't want them all over the place.
