If you were going to design a tactical course - let’s say 3 day/2 night field course - not just range topics, what would you want included?

Thinking of things like:

-Land nav
-Tactical medicine/TCCC
-team mvmt
-team comms

Etc.

It depends on the goals, skills and logistics wanted and needed

I know night shooting has been a valuable experience for me.

The first time you do it, you'll realize a lot of sights are worthless in the dark... and night time is like half the day

You might want to read up on HJ Poole, Mosby, and Paul Howe's material.  They are gold mines of ideas

Practicing target identification should be up there.

A well managed and safe Force-on-Force segment is also invaluable (Triple check that NO WEAPONS are in the training area)

If this is light infantry type stuff, probably add defensive fighting positions, security perimeters, OP/LP, and signature management.
