Did BLTs for lunch with the first garden tomato of the season...omg it's been sooo long since I've had a good tomato, I'd forgotten just how much better they are.  Also learned the perfect bread for a BLT...a good hamburger bun, toasted with the bagel setting on my toaster.  Soft and tasty on the outside, toasty and crunchy on the inside...perfection.

Tonight we're doing burgers, so I've got a bacon weave in the oven, I'll cut it into quarters to top the burgers so there's complete bacon coverage without having to mound it on.

Last night I did a reverse seared NY strip and a baked potato.  Seared the steak over my charcoal chimney.  Worked out pretty well actually.

Did some keto nachos tonight.

Green bell peppers cut into sides and place in a glass baking dish. Top with:

Browned ground chuck (we added a taco seasoning packet after we strained it)
Shredded Mexican cheese

Heat in oven at 350 until cheese is melted.

Top with your choice of sour cream/queso blanco/guacamole.

I just got done cooking grilled cheese with garden fresh tomatoes in them. Ate those with homemade brocolli cream soup the wife made. Delicious!

Chili rellenos.
The poblano chiles at the fruit market looked awesome.
Fire roasted the chilies.
Stuffed with cheese.
Meringue egg batter.
Fried in oil.
When all were done, nuked for a minute to assure the cheese was completely hot and melted.
Served with tomatillo sauce.

It was a odd night.

I flew in last night late, and over booked my day today. If this seems disjointed, it was. It was for two different dinner parties.

Home made sushi platter, including vegetarian rolls, cal rolls, salmon, and tuna. (@6:00)

Philly cheesesteak sandwiches, with a bomb cheddar bechemal.  (@7:30)

I refuse to even look at my kitchen tomorrow.

Fired up the smoker and cooked some chicken quarters, pork back bone, sausage, boudin, and veggie kabobs.  Inside we did bbq bread, mac and cheese, baked beans, and potato salad.  German chocolate cake and cookie cake for desert.

porkbelly ramen. marinated 1/2" slices of porkbelly in soy sauce, mirin, grated ginger, garlic,lime juice and zest, and a little cider vinegar for a couple of hours, then oven roasted at 325 till done. pork broth made with pork bones, garlic, ginger, onions, simmered for several hours. added gai choy, chinese celery, bamboo shoots, rice noodles, and matchstick carrots, along with some diced bean curd and a poached egg. garnished with pork belly slices, cilantro and scallions. nearly foundered.

Pioneer era pumpkin pie.  Actually.... more like a soup.



An apple, half an onion, a bit of garlic, some heavy cream, a cup of chicken stock, and once it is mostly cooked.... the softened inner flesh of the pumpkin.  Then add some feta or goat cheese and a bit of fresh thyme when there is 30 min left.

Cooked with the lid on for 1.5 hrs at 350 on my Big Green Egg, then another 30 min with the lid off.  Then scrape off the inner flesh of the pumpkin and use an immersion blender to puree the contents.

It was excellent.

I've never made apple cake. That sounds interesting!

I made cheesy sausage pasta, modified to be not-spicy so the toddler would eat it. Adding crawfish boil to the adult bowls at the table worked great.

Cooked a turkey in my oil-less fryer and smoked a pork loin.  Both came out great.  Friends brought rice dressing, cornbread dressing, sweet potato casserole, regular potato casserole, among other things.

Indian butter chicken (Instant Pot recipe)

Last week it was chicken tikka masala in the same pressure cooker!

Lady at work gave me a brand new 6-qt pressure cooker because it was too big for her solitary needs and she never used it. Also included a new bread machine (can't wait to try that one) and several months ago a Food Saver she thought was broken out of the box (she didn't know about locking the latch before the unit would energize and had bought a replacement).
