My wife can't eat gluten.  I've become pretty good at cooking gluten free.  But the one thing I just can't stomach is gluten free breadcrumbs.  They suck!  Last time I tried making meatloaf it was great except the "breadcrumbs" got all gummy and gross.  I had the idea to use corn meal instead of breadcrumbs and it turns out that's what some "southern meatloaf" recipes call for.

2lbs ground beef
1lb ground pork
onion
corn meal
s&p
(and maybe tomato paste??)

In any case, if you have a recipe for meatloaf that uses corn meal as the binder....please share it!!!

Apparently the corn meal.  But maybe the pork as well??  Never heard of either in meatloaf before.

This with the egg and or skip the pork rinds all together and make it with salsa.  I didn't believe, but now I do.

Use oatmeal.  It tastes great and is better for you than breadcrumbs.  lots of recipes online.

Put in mild salsa too.  Make loaf, put ketchup on top and bake.

This is how I've always made it. It absorbs the fat. My Mom made it this way and got the recipe from my Grandma. Is there really a recipe for meatloaf? Everyone makes it a little different.

obviously the egg, but I use panko bread crumbs for my meatloafs.

grind them up in a processor or blender.

or just beat the hell out of a bag.

BTW even cool ranch is surprisingly good.
