If anyone is ever driving through Louisiana going on i10 through Lafayette. Do yourself a favor and stop by the Scott Exit, and stop by the best stop and try their cracklins. My absolute favorite.

We call them pork skins here and I can eat them until I’m sick. Yummy.

I prefer the Mexican version; it's the skin + fat layer + 1 in of meat, like a piece of bacon with a cracklin stuck to it... awesome but very rich.

If you're on I 10 in LA, just east of Lake Charles, there's a little town called Iowa. In-Laws, next to Pilot truck stop. Their cracklins have a layer of fat on 'em. They are good, but I can't eat a whole serving. The boudin is decent. They carry Jilly's pepper jelly that's like crack to me

Sadly I refuse to eat store , commercial over cooked cracklins. I love them but I love my teeth more.

Cracklins are more like deep frying cubes of pork belly (with the rind attached). They would differ from frying cubes of bacon in that bacon is cured first, while cracklins are fried without curing and seasoned afterwards. Cracklins and fired pork rinds are different things.
I like Cracklins from Best Stop in Scott LA. I picked up a jar from the new Best Stop in Houston - growl... Mexican grocery stores often have something very similar to cracklins (chicharrones), but not seasoned the same way (they also have fried pork rinds which is different). The Houston Best Stop was selling something more related to the Mexican fried pork belly version rather than the Cajun seasoned version. They should be hung by their heals till they stop fucking it up. Sad thing, they had chicken cracklins that were seasoned just fine. No clue why they intentionally fucked up the pork ones. |

Chicharones/cracklings are my favorite snack. A cold San Miguel and a dipping sauce (sasawan) of cane or palm vinegar, smashed garlic cloves, soy sauce, and bird's eye peppers, with a hot bag of fresh chicharones makes KPEL a happy camper. |

I love those things along with people that chew ice and eat hard foodstuffs like candy, popcorn and nuts! Anything that breaks teeth is good and keeps me in business doing crown & bridge work.
