I pray the Lord should help your income situation where you may be able to provide your family with enough meat, such that even a poor caballero can afford, so you can stop using cheap filler to extend your meals.

2 lbs Ground venison
1 tablespoon Olive oil to brown meat
28 oz. canned Diced Tomatoes
2, 15 oz cans Chili beans
15 oz. can Tomato Sauce
6 oz. can Tomato Paste
1 large Onion (chopped)
1 Bell Pepper (chopped)
4 Garlic cloves (minced)
1 tablespoon Worcestershire
3 cups Beef broth
1 tablespoon Flour
Chili Seasoning
2 teaspoons kosher salt
1 ½ tablespoon Cumin
2 teaspoons Oregano
2 teaspoons Chili powder
1 ½ teaspoons Onion powder
1 ½ teaspoons smoked paprika 
1 teaspoon Cayenne Pepper
1 teaspoon Garlic powder
½ teaspoon Fresh ground black pepper
2 bay leaves

Ok, that did not go well, brown mean drain fat, cook onion, green pepper then add all the powder/canned crap.  You will like this guaranteed.

The recipe is in the comments if you don't want to watch all of the video but it is good stuff. It's not a traditional bowl of Texas Red and is more of a stew depending on how much liquid is in it.

I have one but it includes beans, green beans, and roasted corn.  Probably not your style.

Here's one for ya:

Can of ragu, some tofu, toss in some cumin, and the leftovers your wife has from her boyfriend.

Sorry lol.

If you search for cooking comically chili you'll find a good one.  I recommend halving the amount of cumin he recommends. And of course skipping the beans since you don't want those.  Might be a bit soupy without them so maybe a bit less tomato sauce too.

1.75 lbs ground beef
2 cans of chili seasoned beans
One can of diced chili flavored tomatoes
Diced onion
Onion powder, garlic powdered chili powder to taste.
1/4 cup of catsup
One Anaheim pepper diced and soaked in one cup of hot water for 10 minutes and then spun in food processor until mostly liquid.

Made from different arfcom recipes, but with ingredients I can get here.


- [ ] Plan 2-3 hours for prep. 5+ hours for cooking

4 Pasilla peppers
3 Jalapeno peppers
3 Serrano peppers
1 oz dried Mexican red peppers ( I use the small hanging type)
1 can 7.5 oz Chipotle peppers in Adobo sauce
1 medium onion chopped or minced ( 1 cup if using freeze dried)
4 cloves garlic chopped or minced (4 Tbs of freeze dried)
2.5-3 lbs beef chuck cubed close to the size of Star Bust candy size
2 teaspoons cumin
2 Tablespoons Olive oil (3 if using freeze dried goods)
2 cups beef stock
2 cups water (divided)
1 tablespoon brown sugar
1 tablespoon Worcester sauce
Salt and pepper to taste (optional)


Stir in the beef broth, 1 cup of water, brown sugar, Worcestershire in a slow cooker. Set temp to 200-250.

Start by lightly toasting the dried peppers in a dry pan about a minute or 2 per side. This will help to release the oils.

Remove from heat and cool enough to handle. Remove the stems and pour out the seeds.

Soak the peppers in 1 cup of the (hot) water while you prepare everything else.

Add the cubed beef to a large bowl and toss with the cumin and a bit of salt and pepper. Make sure everything is nice and coated.

Heat 1 tablespoon oil over medium high heat in a large pot and add the beef. Cook 6-7 minutes, searing the beef all over. Add to the slow cooker.

Remove stems and seeds from all other raw peppers

Dice onion, garlic, Pasilla, Jalapeño, and serrano peppers. Add remaining olive oil to pan and get it hot. Dump in pepper/onion/garlic and stir consistently over high heat for 5 minutes. If you like you chili with large chunks, add this mix to the slow cooker now.

Put the Chipotle and soaked red peppers in a blender/food processor and blend until smooth. If you prefer a smoother chili add the pepper/onion mix in as well.

Pour the mix of blended ingredients into the slow cooker. Let cook for 5+ hours.

If someone can find Subnets recipe, that’s the one to use. I’ve been making it for years. I can dig it up and post it later if no one else does. I grew up eating the typical chili with beans and ground beef. While I still like that, this is my preferred chili now.


3 each of the following dried chilis:
Pasilla
New Mexico
Ancho
Arbol
Canned chipotles in adobo
3Tbsp cumin
1 tbsp chili powder
1 tbsp garlic powder (or use fresh garlic)
Large onion
4 pound chuck roast
Chicken stock

Rehydrate the dried chilis in 1 qt chicken stock. Blend with a few chipotles and some sauce. Brown the chuck roast in a large pot or dutch oven. Remove and cut into bite size chunks. Dice onion and saute in the fond. Then dump in the blended chiles, cubed beef, and spices. Add chicken stock to almost cover the meat. Cook on low 4 hours, until beef is tender.

I usually just play it by ear . It comes out a little different every time . One of my favorite ingredients is to add red pepper chile sauce in place of or in addition to tomatoes. The Fresh Chile Company out of Las Cruces NM has excellent products and the Sun Dried as well as the Fresh Hatch Red Chile Sauce make for some awesome pots of chile . Good in breakfast dishes as well . Good luck .

This is an adaptation from the book and is a work in progress.  But it's a hell of a good place to start and is delicious as-is.  You can alter the ingredients as you please.

Whole I love beating a dead horse as much as anyone, I'll advise you to check the cooking subforum. There's already a thread or two about this there, and it has less jackassery than you'll find in GD.



There are some real chili recipes there, as well as some advice on technique. Once you make a real chili, you'll never go back to that poor/lazy hamburger & bean soup shit that so many Arfcommers advocate for.
