So. a couple days ago the topic of dinner was brought up. I stated that my plans involved tacos made from ground beef and store bought seasoning.
There was much groaning. Today, I had a little more time to prepare dinner. I started with the beans. 
I should say that I started yesterday as the dry pinto's have been soaking for some hours. But beans a solo aren't... enough. I can get tortillas here, but they spend at least a week in shipment, not to mention the processing before that, so I decided to make my own. Went to the commissary and... no lard. Oh well, there are ways around that. 
A couple pounds of ham hock later, I've rendered enough lard to start. Meanwhile, the beef has been marinating in the requisite blend of aromatics for a while now. 
Almost grill time. but first, tortillas 
I do have a comal, but it didn't want to play well with the glass range so stainless it is. 
After some tortilla cooking and some grilling... 
it was almost time to assemble. If I didn't mention, I whiipped up some salsa and guac from whatever ingredients I could source. 
And so.: fresh tortillas full of carne asada, Topped with salsa and guacamole and a side of frijoles. I had to use Monterrey jack cheese, because the commissary didn't have fresco. Also jack is delicious.
