Do I use series 70 or series 80 after market parts in a Loaded Springfield?

Careful there...if you're looking for a new beavertail grip safety, keep in mind that SA's frame tangs are cut differently from the other mfrs.

I already ordered an Ed Brown series 70 beavertail. Will I not be able to use it?

It has to do with the shape of the frame around the point where the grip safety is pinned in. Traditionally, it's .250. Springfields are .220, which means you'll have a gap between the frame and the sides of the beavertail. It should function, just may look unsightly to you.

It may also be different since you have a Loaded rather than a Mil-Spec model.

Correct.  The gap can be welded up.
