I have a used .mil backpack that I picked up at a Army Surplus store around 5-6 years ago.  There are no markings on it anywhere
except all the large plastic snap buckle say MILLET on them ( it's a French backpack company ).  I like the backpack alot, it is very
comfortable but it needs a few more pockets/pouches on it.  I also want to setup a hydration system in it because it already has a
area in the pack that would be very easy to modify.

I also want to modify my M3 Corpsman bag to update it a little.

Anybody have any links to places to get good quality .mil style fabric?  Looking for OD mostly...

Not sure about the OD specifically, but these are some good camping fabric dealers to check.

One of these should hopefully have what you are looking for.

If you're looking for plastic hardware to go with your textiles, ITW Nexus makes good stuff and is widely used in a lot of store brand stuff.
