For a FAL, your best deal right now, without going to a custom builder, would be an IAI M444 (~$750) or a DSA SG58 (~$900).
A SAR-8 is a post-89 ban version of the SAR-3, which is a Greek license version of the HK91 (G3), imported by Springfield Armory. If you want one of these, get one of the guns with the receivers from Portugal (marked INDEP or FMP). They also go in the $750 range. Stay away from the current production SA SAR-8. If you see one you'll see why. The SA version of the FAL is called the SAR-48, with the post 89-ban version called the SAR-4800. (The US Military tested the FAL produced under the nomenclature T-48)
Go for the FAL, if you shop around you can find a good one for $750 or less. I picked up an StG-58 at a local shop for $625.

I currently own a couple of FALs and a CETME. I plan on picking up an Indep or FMP G3 next weekend. Frankly, after the current supply of CETME rifles is gone, I don't think we'll ever see them again, and for ~ $450 out the door, they are a good deal and an interesting collector. I think the G3's will be around a little lonnger, but the same situation applies. BTW, CETME magazines will work in the G3.
I guess if you can afford it, I'd say get the G# and CETME first, presuming that you are interested in them. The FALs will be around for a while, the others won't be with us long. Over 3,000,000 FAL variants were made and it seems like most of them are in the US in the form of parts kits; upper receivers are easily found for ~ $240, parts kits from $125 - $350, assembly by a competent gunsmith ranges from $125-$250.
