The benefits of living in Alaska.....Dall Sheep ribs over a evening campfire on McColl Ridge in the Wrangell Mountains. A time when the first snow laced the highest peaks...overcast with fall in the air. The mountainsides red with blueberry leaves, yellow cottonwood and aspen in the valleys. Listening to the horses whinny at the scent of a bear. A glass of red wine before and cowboy coffee for desert....rejoicing in all the good food and grandeur of the country. You ought to go if you ever get the chance!!!

When I was a kid we used to catch buckets of crawdads. Thems good eatin'. Second best was these catfish we caught once. Fried 'em up southern style. Most tasty thing I ever shot was a pheasant. We cooked it whole in a fire with rocks, and then peeled the feathers off like a corn husk. Yummy.
The very best was pheasant followed by venison in the dutch oven and lastly fresh salmon from the Washington coast.

1) Ruffed grouse breasts fried in butter or margarine. They melt in your mouth.
2) Bluegills scaled, still in skin, fried. 3) Bullheads skinned and fried. 4) Fresh Whitetail liver, fried shortly after it was shot. 5) Fresh Whitetail inner tenderloins especially from a yearling. 6) Canvasback duck 7) White fronted goose 8) Walleye |
Hey Greaper I have never tried Whitetail liver, does it compare to beef liver? How do you prepare it?
Oysters plucked straight out of Black Bay Louisiana from my fathers fishing boat. Cannot get any fresher.
BBQ'ed redfish with the skin on. Mmmmmm... |
Wing?
Dove. Fin? Snook in Saltwater Walleye in Fresh Field? Plain 'ole Venison. Mmmmmmmmm MMMM!!! |
Well, greaper hit a few on my list....
Confederate - yes - whitetail liver compares to beef liver - not the exact same flavor, but similar. Prepare the same as beef - slice about 3/8" thick, flour it and fry it. I add a little garlic salt to the flour. Sauteed garlic and onions on the side - yummmm! 1. bluegills, skin on - crisp on the outside, flaky on the inside 2. crappie - white or black - fried or blackened 3. whitetail inner loin or backstrap very quickly seared in butter, salt and pepper 4. wild turkey pot pie 5. dove breast grilled with a little bbq sauce, jalapeno half, and onion slice 6. ferral hog bbq (best bbq I've ever had) 7. my *own* venison chili (I guess part of the thrill here is that I don't use a mix or a recipe from someone else and - hey - this shit tastes like chili!! - and it's tastes great!!) 8. whitetail liver w/onions and garlic Tate |

Sauteed onions on the side. It seems to me that grain fed whitetail deer have a more milder tasting liver (still different from beef though). Other deer that do not have the grains in their diets seem to have a more stronger tasting liver. |

Slow roasted northern michigan wild turkey.Even better than pheasant.
Fresh venison tenderloins are almost at the top of my list. The only thing I like better is wild boar - a big hunk of back strap cooked slowly on the barbeque....MMmmmmm..
Damn them's good vittles!! |
Mmmmmm All the good grazeing!
Moose mignon with salt, pepper and garlic,on a stick roasted over a fire in Alaska, 15 miles from the nearest road!(which was the Taylor Highway, from TOK to Chicken< a 60 mph dirt road) Ahi and Aku (Tuna) sashimi, caught off of Kauai, sometimes made into a taty salad the locals call "Poke" (Poh kay) Mmmmmm nothing like raw fish, chased with large quantities of ice cold Budweiser! White Tail Venison steaks, country fried(Pounded, salt pepper garlic, floured and quick fried) We prefer the taste of eastern washington does to the bucks, although everyone likes antlers! Welsh Minge......... for the cunning linguists amongst us! |

Cut up a bunch of nice steaks, marinated them for about a half hour in Italian dressing, and grilled them, 30 seconds each side. Man were they freekin delicious! Sold the rest to a couple of local restaurants. It paid for the trip! [:)] |
