I went through my history. Keeping in mind that my phone is with me almost 100% of the day, I found less than a dozen non-intentional recordings from today back to Jan 2016. All were less than 8 seconds long and had nothing but background noise.  I'd say this worry is a bit overblown if my experience is representative.

There's a laundry list of Android settings to adjust to slow down Google's data mining and snooping.  I'm sure this isn't a complete list.
Life's too short to type out the entire list.
In "Location" turn of Google Loacation History and Google Location Sharing.  Better yet turn off Location unless you really need it for a specific app.
Uninstall or disable:
Google app
Google Play and TV
Any other Google app that allows disabling or uninstalling.
I have Google Play Store disabled.  I use it when I have to.
Use DuckDuckGo or some other search engine that doesn't store your life story.
If you absolutely have to use Google products they're going to track you.  Deal with it or find another app.

Oh, remove permissions to microphone too.

no tinfoil here but with my current phone i can remove the battery. that absolutely turns it off. newer phones you cant remove the battery. so theoretically its possible that a hack or modification of the OS on the phone would disable your ability to turn your phone off...something i have been curious about. similarly you can turn off most 'emergency' alerts but a few you cant. I use that as an example. in some cases it has been decided some alerts are so important that your phone must alert you whether you want it to or not.

Unless you remove that(which you usually cant) your still going to need your tin foil hat. Best bet? Store your phone in a lead box in the freezer separate from your battery.

perhaps you could provide a reference to this? i have a samsung s5. i had to take it apart to replace some parts. if there was a battery in there someplace it was very well hidden or extremely small in which case how could it provide enough power to work?

Every chip and component of the phones have been researched and confirmed.  There is no "spare battery" in the Galaxy phones.  You can do some google fu where people give a complete listing and breakdown of every single chip and part as well as cost analysis.   It is like this for just about every main stream market phone.
