Would have focused even more on what they already did.

Prostitution/Human trafficking
Extortion/"Protection" rackets
Smuggling non-taxed Tobacco and other taxed items for profit (ETA)
Bribery/Political Corruption
Union Rackets
Gambling (ETA)

They'd be into the same things they were into before prohibition & after prohibition.

Prohibition didn't make organized crime, nor did its end break them.
